This is a hearty batter bread that pairs well with soup or stew. It is easy to make with a few simple ingredients. This recipe is gluten free, dairy free, egg free, and nut free.
Ingredients
3 c oat flour
1 t baking soda
1/2 t salt
2 t sugar
1 1/2 c nondairy milk (we use unsweetened coconut milk)
1 1/2 T vinegar
2 T olive oil
optional: Add a teaspoon each of Italian seasoning, garlic powder, and onion powder
Instructions
Preheat oven to 350.
Combine milk and vinegar in small bowl and let sit for 5 minutes.
Combine oat flour, baking soda, salt, and sugar (and optional seasonings) in large bowl.
Add milk and vinegar mixture and oil, and stir until smooth.
Pour batter in greased loaf pan, smooth top, and bake for 55 minutes.
